Preserving Goa’s spirit: Cifa Bar's timeless charm

It’s the 70’s, and the streets of Goa are serene. People cycle to work or go about their daily routines. The trees are plenty, the air is crisp and clear, and while people hustle, no one is in a rush. Neighbours walking past each other stop for a quick chat. The smell of good food lingers in the air, homes feel like havens, and the streets are safe and welcoming.

Nestled in the vibrant and historic neighbourhood of Fontainhas, Cifa Bar has been a cornerstone of the community since its inception. Founded on August 28th, 1976, this Portuguese tavern is now managed by Savio Raposo, who took over the reins in 2015.

A legacy of flavour and tradition

Originally started by Savio's father-in-law, Cifa Bar quickly gained fame for its authentic feni, a traditional Goan spirit. Over the years, the menu has evolved to include delightful variations such as masala feni, ginger feni, and jeera feni. In the early days, labourers would stop by between 6 and 9:30 pm for a quick feni before heading home after a hard day's work, creating a lively and bustling atmosphere.

Keeping up with the times

Despite the influx of new bars in the area, Cifa Bar maintains a loyal customer base. "We have 90% local customers," Savio proudly states. The bar has embraced modernity by enhancing its online presence, yet the essence of the place remains rooted in tradition. "Everything is old here," Savio notes. "Only the colours have changed a bit, and some of the furniture has been updated, but it’s all antique." People passing by are drawn inside, often leaving satisfied with both the drinks and the warm, friendly service.

Culinary delights

Cifa is not just about feni; it offers a mouth-watering selection of local dishes. "Liver fry is very famous at our bar," Savio shares, highlighting a customer favourite. Other popular items include masala pork sausage, chilli fry, omelettes, and various fish dishes depending on the catch of the day.

Preserving the charm

While some changes have been necessary over the years—such as updating furniture and adding a fresh coat of paint—the charm of Cifa Bar remains. The antique furniture, now carefully restored, still tells the story of decades past. The atmosphere is a blend of nostalgia and warmth, inviting everyone to sit down, relax, and enjoy.

Challenges and triumphs

Running a bar with such a rich history is not without its challenges. "There are a lot of challenges," Savio admits. "But with my experience and the support of my family, we manage." Different customers come with different moods and expectations, but Savio’s extensive experience in the hospitality industry has equipped him well to handle any situation. The support from his family is invaluable, with his mother-in-law, wife, and a dedicated worker, Krishna, all playing crucial roles in the daily operations.

A pillar of the community

As Fontainhas evolves, Cifa Bar continues to be a steadfast presence, adapting while preserving its heritage. "Panaji has changed a lot," Savio reflects. "Tourists are coming, and it has had an effect on the bar. But the feni, the tradition, it’s always there." As the sun sets, casting a golden glow on the streets, Cifa Bar comes alive with the laughter and camaraderie of its patrons. The clinking of glasses and the tantalising aroma of delicious dishes creates an atmosphere of warmth and hospitality.

Cifa Bar is more than just a place to eat and drink—it's a living testament to the spirit of Goa, a bridge between the past and the present. As one local customer shares, "A lot of places in Panjim are commercialised and expensive to cater to tourists. Cifa hasn't fallen prey to that and still resonates with the bygone era. Plus, the food and drinks are great, and it’s an amazing place to catch up."
