Crispy Peanut Butter Cups
People are divided on peanut butter. Some love, some don’t. But, if you do relish the thought of creamy (or crunchy) peanut butter mixed with rice crispies and a dab of chocolate, then try this recipe on for size.
Ingredients
• 1¼ cups peanut butter
• ¼ cup butter, room temperature
• 1 cup powdered sugar
• 1 teaspoon vanilla extract
• 1½ cups rice crispies
• Chocolate chips, probably about 220-250 grams
Instructions
Preheat oven to 350 degrees.
Lightly butter the muffin tin. Place about 6-8 chocolate chips in each muffin tin
Put pan in oven and until chocolate chips melt
Take the pan out of the oven and squish down the chocolate in each muffin cup with the back of a spoon. Turn oven off and set pan aside.
Mix peanut butter and butter together then mix in the powdered sugar and vanilla. Stir in the krispies.
Evenly divide the peanut butter mixture between the 32 muffin cups, pressing down into the cup and smoothing the tops with a spoon. Refrigerate until peanut butter firms up, about 15 minutes or so.
Store in an air tight container in the fridge.

Apple Rings
An apple a day keeps the doctor away. Apple rings smothered in batter, fried in oil and sugar sprinkled on, might not really help with the doctor but there’s no denying the oodles of amazing flavour and pleasure that you’ll get from it.
Ingredients
• 1 cup all-purpose flour
• 1/4 teaspoon baking powder
• 1/4 teaspoon salt
• 1 cup plain yogurt
• 1 large egg
• 6 cooking apples, sliced into 1/4-inch thick slices
• Oil (Either canola, coconut or sunflower preferably)
• 1/2 cup sugar
• 1 to 2 teaspoons cinnamon
Instructions
In a small mixing bowl whisk together flour, baking powder and salt. Set aside.
In a separate bowl whisk together yogurt and 1 egg; whisk until well combined.
Whisk yogurt mixture into flour mixture; set aside.
Slice apples and using a round small cookie cutter, or a knife, cut “rings” out of the middle of the apple slices.
In a large deep skillet, heat the oil over medium-low heat.
Dip the apple rings in the batter then place in the skillet and cook in batches, 1 to 2 minutes per slice, or until golden, turning once to cook the other side.
In a bowl or plate combine sugar and cinnamon; mix well.
Sprinkle sugar mixture over the apple rings while still hot.
