If you’re in Goa on holiday and you’ve just moved here, don’t forget to sample the great street food available. You get beef croquets and prawn rissois, which are little dumplings of sorts filled with prawns in a creamy sauce. Another great staple to try is the cutlet pao. It involves a slice of beef, beaten until it’s quite thin and then soaked in a vinegar based marinade. The cutlet is then dipped in egg and rava and fried, before stuffing it into local Goan bread called poi, along with a cabbage and onion salad. You can also ask the vendor to pour a little gravy into the pao, if you don’t mind getting your fingers messy while eating. Another great dish to try out is the ros omlette. Ros is the Konkani word for gravy and omlette is just that. The dish was apparently invented in the south Goa town of Margao and involves an omlette in a plate smothered in chicken and coconut gravy, topped with chopped onions and chillies. If you’re lucky, you’ll get a piece or two of chicken as well. One eats this with local pao. These are must tries, if you really want to experience Goa. You can also sample choris pao, which is the local Goan sausage stuffed into, you guessed it, pao. Go ahead, take a big bite.
