The ICAR-Central Coastal Agricultural Research Institute (ICAR-CCARI) in Goa has successfully patented an innovative solution titled "Process for preparing Nutmeg Taffy and resultant food product thereof." Spearheaded by Dr. A. R. Desai and his team, this invention can potentially revolutionise the nutmeg industry, offering a promising source of additional income for farmers across India.
Nutmeg, a crucial spice crop in India, has traditionally been cultivated for its seeds and mace, leaving behind the nutmeg pericarp as a residual by-product. Recognising the untapped potential of this by-product, ICAR-CCARI has developed Nutmeg Pericarp Taffy, a food product aimed at maximising the utilisation of nutmeg pericarp.
Boasting significant nutritional value and a long shelf life of up to 12 months without synthetic preservatives presents farmers with a sustainable and cost-effective solution. With each fruit contributing 80-85% of its weight to the taffy, the invention promises an additional annual income of Rs. 5,600 per tree, augmenting the earnings from traditional nutmeg spice products.
The simplicity of the process, minimal equipment requirements, and commercial viability make this invention applicable across various sectors, including agri-entrepreneurship, self-help groups, small and medium-scale food industries, and agro-ecotourism centres.
The 'Nutmeg Taffy' patent has been successfully commercialised in collaboration with M/s Tanshikar Spice Farm and the Goa State Biodiversity Board with the
Institute Technology Management Unit of ICAR-CCARI, Goa, playing a crucial role in facilitating the patent application process.
