The Traditional Goan bread/Pao is a favourite of most Goans and this also has been introduced in other states like for example in Maharashtra. However, saying that in today’s time I wonder how hygienically the Pao/bread is being prepared at bakeries in Goa; as I see on most things like fish and meat markets etc, the Goa government food monitoring authority is basically on corrupt/paralysis mode, to check on food hygiene in general.
It would help allay fears of consumers if bakeries start offering a clear window approach where people can clearly see how the bread is being made. I for one, despite being a “Pau” fan, am really skeptical of purchasing them as I have heard some disgusting accounts of what happens at some bakeries. Of course the other big issue is the hygiene of the delivery men of today’s time.
