On Sunday, April 3, high-end fashion model, chef, restaurant owner and and contestant Sarah Todd launched her new cookbook “A Healthy Model” at her modern Australian restaurant Antares (named after her zodiac sign; the fifteenth brightest star in the Scorpius constellation) in Vagator.
Classically trained in French cookery at Le Cordon Bleu and having gained experience alongside Michelin star chef’s Neil Borthwick and Angela Hartnett at Merchant’s Tavern in London; hatted restaurants Tonka and St. Crispin in Australia, Sarah has amassed countless recipes and cooking practices that she’s distilled into her simple, easy-to-follow collection including Quinoa Nasi Goreng, bouillabaisse, and butter chicken; suitable for the novice as well as experienced cook.
Her restaurant is a reflection of this with the menu featuring a wide variety of dishes including tempura prawns, red snapper, puy lentils, cheese croquettes, ricotta and potato gnocchi, sprouted lentils, carrot mousse, apricot balsamic compote, barbeque chicken skewers, smoked corn puree, pork belly, slow cooked lamb shoulder, eggplant puree, pickled beetroot, and sherry jus, just to name a few.
Many of the above favourites have also made it into her cookbook. With more than 100 simple, fast, fresh recipes for healthy food that are satisfying and full of flavour, the recipes in the The Healthy Model Cookbook sure do not compromise on taste. Instead, they celebrate the joy of cooking and eating the healthy food that keeps Sarah looking her model best including deserts like vanilla tapioca porridge, iced nougat, and Australian smashed Pavlova. No boring lettuce leaves for this gal.
Published by Lantern / Penguin, Sarah’s first book will hit the stands in Australia, India, Middle East and UK this May 2, 2016. This event was filmed live for Australian television as part of a 6 episode series showing her journey from model to mum, MasterChef contestant to restaurant owner.
