The recent raids by activists and right wing elements on vehicles carrying beef may hit hard Goa's world-famous brand - mouth-watering pork sausages.
The reason is simple. Goan pork sausages are stuffed in small intestines of beef cattle. Sausage producers now fear that the ongoing ban on slaughter of beef cattle may adversely affect the easy availability of the intestines used to stuff the pickled pork.
As of now, sausage producers have begun to feel the heat as the supply of the intestines from beef cattle has gone haywire, thanks to the ban on cattle in Mumbai and cow vigilantism by fringe elementes. Resume supply of beef,

their fingers crossed over the future.
The supply of small intestines from the suppliers in Mumbai have faced a roadblock with the supply virtually running dry following the ban on beef animals.
While a bundle of small intestines was pegged at around Rs 150-200 a month ago, the rate has shot up considerably, with sausage producers and vendors saying that the increase in the price of intestines will further push up the cost of sausage production. What's however worrying the sausage makers more than anything else is the question of easy and free availability of the intestines at reasonable rates.
Says Johnny Crasto, a sausage producer from Davondem, "Sausage makers are indeed a worried lot with the supply from Mumbai disrupted for want of the beef cattle for slaughter. Unless there's free availability of the intestines of beef cattle, the brand Goan sausage will face an uncertain future".
Johnny pointed out that his long-time suppliers managed to send him a consignment of intestines with great difficulty. "It's years now since we have been procuring our requirement of intestines from Mumbai. They come clean and importantly they are small and meet our requirements," Johnny added.
When The Goan contacted a beef cattle intestine supplier from Mumbai to shed light on the disruption in the supplies to his Goan buyers, he pointed out that the supply of intestines is affected because of the ongoing turmoil witnessed in the beef trade across the country.
"Since we cannot get the intestines from Mumbai, we now procure our requirements from Andhra Pradesh and Hyderabad. Even during the rail journey back home, we are forced to answer a host of questions on the nature of the product. We have to only hope for better days," the trader said.
