Goans on Monday went clueless over their bread. A study pointing to presence of possible cancer-causing chemicals in bread in Delhi raised serious questions over what goes into making of the pav in Goa.
However, Bond Braganza, Secretary of the All Goa Bakers Association put all theories to rest ruling out use of any such chemicals in manufacture of local bread.
“We don’t use any of these chemicals (potassium iodate or potassium bromate) in manufacturing of the 'pav' (Goan bread) in Goa. The ingredients that we use to make bread are water, salt, yeast and a little sugar (for taste). Unless if those substances are present in the yeast, which we are not aware, we don’t use both those chemicals,” he said.
Salim A Veljee Director, Directorate of Food & Drugs Administration could not be contacted till late evening for comment.
CSE’s new study tested some of the bread sold in Delhi and found residues of Potassium Bromate and Iodate in commonly consumed varieties.
